Traditional Norwegian cuisine is mainly based on the raw materials available in a country dominated by mountains, wilderness and the sea. Modern Norwegian cuisine, although still strongly influenced by its traditional background, is largely influenced by foreign kitchens such as the Italian, French and Thai.The one traditional Norwegian dish to have gained international popularity is the smoked salmon. Smoked salmon exists traditionally in many varieties, and is often served with scrambled eggs, dill, sandwiches or mustard sauce.
